Making Rice Bowls with the Thai Curry Rice Meal Kit

Need more than four servings of Thai Curry Rice?  Or maybe you have some leftover?  Here are some ideas to upsize or elevate your rice dish.  Remember that the possibilities are endless!

The Protein Bowl: We made the Thai Curry Rice according to the package instructions along with a pound of cubed boneless raw chicken breast.  Once it was ready we laid some out in a bowl, and added a large egg, some sautéed tofu, and kimchi for a spicy kick.  

The egg and tofu add 18 grams of protein in addition to what's in the chicken breast.

 

The Veggie Bowl: We cooked the Thai Curry Rice according to the package instructions but without adding any chicken or anything else.   This flavorful bowl is perfect for vegetarians.  We assembled our bowl with avocado, cucumber, carrot sticks, and sautéed tofu.  Delicious!

The Whatever Bowl: We took the Chicken bowl and added a fried egg, some tofu, avocado, carrot sticks, kimchi, and cucumber.  Soft-boiled eggs would go great too.  Just adding some pantry staples could go a long way to making a delicious, filling and nutritious meal.
